Yes. I'm on an AT&T Note 5 with no service. I just keep it on airplane mode. Still has a sim card and everything, but can't make calls or use cellular data. An unlocked phone means it'll work with almost any carrier. You could get the iPhone 5 unlocked or on Sprint or AT&T or Verizon, etc. It won't matter if you're not planning on getting service on it. If you're not signed up with a carrier, you'll basically have an iPod touch. Buying an iPod touch 6 might be a better option. A new 16GB model is $200 and comes with a much faster processor and more RAM than an iPhone 5.

Basically it will work like an iPod Touch. Other people have written a comprehensive list but you can use it for all kinds of things. Besides making actual phone calls and using it when away from WiFi, it will still function the same as it always did.

iPhones don’t use an unlock code, normally. Those unlock codes are useful for Android devices.
iPhones use iCloud for unlocking from the carrier network.

If you connect it to a charger or a computer it will turn on. This is the only way, I’m afraid.
I used a 3g with a broken power button for many years. All in all it was not a big problem, as you are not supposed to turn off an iPhone anyway.
If you can jailbreak I recommend Activator to remap the power button to something else (I had long hold on Volume Up, for example). This will only work when the phone is not completely off, of course.
It will be extremely difficult to seperare any module and use it for anything else because the modules are interconnected and interfaced with the motherboard in a certain method.
For example, if you manage to remove your camera module without damaging it, you will have a tough time connecting it with any new hardware because the software which is used to bridge the two components is absent.
