What is custom firware for the psp?

I want to know how to put custom firware onto my psp 3000, and what i can do with it. Id like the latest and greatest software.

I at one time wanted a custom firmware but now want to remove it back to the origianl psp firware updates which is currently 5.00 so how do i acclomplish that?
